Sweet Potato and sausage breakfast casserole

You will need:

1 onion chopped

1 lb ground pork sausage

1 sweet potato

salt and pepper

6 eggs

1/2 cup coconut milk

1. Preheat oven to 400

2. Grease an 8x8 baking dish

3. With a grater, grate the sweet potato into the bottom of the baking dish. Press firmly on it so that it's like the crust.

4. In a large skillet sauté the onion and sausage until it's browned. Season with salt and pepper.

5. Now top the sweet potato crust with the sausage and onion mixture

6. In a small bowl whisk together all eggs, coconut milk, and some salt

7. Now pour egg mixture on top of sausage mixture. Bake 40 min.
