There are a couple of other paleo blogs that I follow on a daily basis. One in particular is called
PaleOMG. If you have never seen it, you should check it out. It's really funny and she has some great recipes. I had some mango, some plantains, and also some grass fed sirloin steak,so I decided to make this dish.
You will need:
2 large sirloin steak cut into strips
1 onion, sliced
2 cloves garlic
2 plantains, ends removed, peeled and sliced into 1/4 in pieces and smashed
2 mangos peeled and cubed
2 tsp curry powder
1 tsp garlic powder
1 tsp red pepper
Salt and pepper
3 tblsp coconut oil
Heat skillet with 1 tblsp coconut oil, add onion and garlic. While that's cooking take another saucepan and over medium heat add 2 tblsp coconut oil and start to cook plantains. Let cook 3-5 minutes on each side.
While plantains cook add your steak to the onion and garlic. When the meat is almost cooked through add the mangos, garlic powder, red pepper, and salt and pepper. Cook for a couple of minutes until the meat is cooked to your liking. When your plantains are cooked add them to the meat and mango mixture.
Serve and enjoy.
