We received some ribeye steaks as a Christmas gift from a company that my husband does work with. I've always found that food is my favorite gift. You can never go wrong if you send me the gift of food. We have another friend that gives us the Harry and David fruit of the month club for Christmas, and I must say that it is probably my favorite gift. Every month when I open my front door to find their fresh fruit of the month in a box, I can't help but get excited! It's the gift that keeps on giving.
So tonight for dinner we are having grilled ribeye steak, sautéed squash, and okra and tomatoes.
For the steaks, I simply let them marinate in salt, pepper, coconut aminos, and balsamic vinegar for about 2 hours before I cooked them. The squash I just sliced with an onion, and sautéed it in olive oil, and seasoned it with salt and pepper and let cook until it was caramelized. The okra I cut up, sauté in olive oil until slightly browned, then add a can of diced tomatoes, season and your done. This is such a simple, and colorful meal.
