Sautéed apples and pecans

 
I started my day by doing a sprint triathlon with some fellow crossfitters. It really was fun after it was all done. We swam in a lake that I know alligators live in, so I was a little nervous about the possibility of seeing one, but luckily it didn't happen. I tried to get in and out of the water as quickly as possible. Crossfit is about being prepared for anything, so doing a random triathlon is one of them. When I got home I had some eggs for breakfast, and for lunch we made bunless burgers. After lunch I read through my Well Fed cookbook and found a whole30 compliant dessert. I didn't have a few of the ingredients, so I made my version of it. In Well Fed she actually uses bacon in this recipe. It is sautéed apples and pecans, and it tastes like apple pie. It was exactly what I needed. You will need: 2 apples 1 tablespoon ghee or coconut oil 1/2 cup of pecans ( or more if you would like more) 1/4 teaspoon cinnamon 1/4 teaspoon vanilla extract Start by adding ghee or coconut oil to a skillet. Once it is melted add your apples and pecans. Let them sauté a couple of minutes. Finally add the cinnamon and vanilla and sauté until soft. You can also do this with peaches and it would be yummy too! 20120805-184540.jpg
