To make you will need:
2 lbs boneless skinless chicken strips
2 eggs
1/8 cup coconut milk
Salt and pepper
Cajun seasoning
1 cup almond flour
3 tablespoons coconut flour
Olive oil
1. Start by combing the eggs and coconut milk in a bowl. Beat together.
2. Now season chicken with salt, pepper, and Cajun seasoning and place in a glass dish
3. Pour egg and coconut milk mixture over the chicken. Let soak for about 15-20 minutes so it will stick to the chicken.
4. Now mix almond flour and coconut flour on a plate.
5. Take each piece of chicken out of the egg mixture and dip in the almond flour mixture and coat on both sides.
6. Heat olive oil in a large skillet. Once it is hot add the chicken and cook until crispy and cooked all of the way through.
7. Enjoy.

How long did you cook the chicken in the olive oil? Just trying to make sure I don’t over/under do it.
It was probably about 5 minutes each side. I did cut one of the pieces in the middle while I was cooking it to check though.
