This is seriously one of the best, and easiest paleo desserts that I have ever made. I didn't want it to ever end because it was that delicious. It took me about 3 minutes to put ingredients together, and 3 minutes to cook in the microwave.
I found this recipe in PaleOMG. I added a few things and eliminated a few things, but it is still basically the same recipe that she uses.
To make you will need:
1 tablespoon coconut oil
1 tablespoon coconut sugar
2 tablespoons almond flour
1 tablespoon coconut flour
1 egg, whisked
1 tsp vanilla
1 tablespoon apple sauce
1 tanlespoon maple syrup
Pinch of salt
Pinch of cinnamon
1. Put all ingredients in a large mug. Mix well, until there aren't many clumps.
2. Microwave for 3 minutes
3. Turn mug over onto a small plate and it should pop out. It will almost look like a mini sponge cake. Now enjoy!
I don’t use a microwave so can this be cooked in the oven?
Yes, I think it could be. Try cooking it on a low temp and watch it closely so it doesn’t burn.
I love and make a lot the nut free bread. I can eat nuts but am not supposed to eat almonds. any other nut or nut flour I can use instead? also, is the eggs (in the bread) enough protein?
You can also use coconut flour, the consistency will be a little but different though
