I've put this recipe up on the blog before, but lately I've had a lot of people ask me for it. These cookies are a never fail, always delicious paleo treat. My husband would ask me to make them every day if he thought that I would do it. I made some yesterday to celebrate the end of WOD 13.3 in the crossfit open. Although my husband is still going to give it a go one more time to try and get a few more muscle ups, I'm done with it and ready to move on to next weeks WOD. I can honestly say that I have never in my life, even after my marathons, been as sore as I am from doing this weeks open workout. I am wide awake right now at 5 am on a Sunday morning because I am so sore that I cant sleep. Even as I sit here and type I am concerned about how bad it's actually going to hurt when I have to stand up!
Below is the recipe. This time I added more pecans and coconut flakes than I usually do, and I actually used sea salt instead of my normal cooking salt. They turned out chunkier and the salty flavor was really great.
