Chicken and apple sausage over zucchini noodles

 
Today is day 13 of whole30. I have to say, I am beginning to plan my meal for day 31. The only thing I really want is coffee with a sweet leaf in it, and some paleo chocolate chip cookies. Today I had eggs for breakfast, chicken and a sweet potato for lunch, and some trail mix that I made for a snack. I bought some all natural chicken and apple sausage today at the grocery store. I was so happy to find that it didn't have any random additives that aren't whole30 compliant, so I bought it in hopes that I would just figure out what to cook with it. I haven't made noodles using zucchini yet, so I decided to try that out and turn the chicken and apple sausage into a delicious paleo pasta dish. You will need: 1 tablespoon coconut oil 1 package of chicken and apple sausage (6 links), cut into chunks. 1 clove garlic 1 onion chopped 2 14.5 oz cans of diced tomatoes 1 tsp Italian seasoning Salt and pepper Start by sautéing the garlic, onion and sausage in the coconut oil. Sauté until sausage is cooked. Next add seasonings and diced tomatoes. Cover and let simmer for 30 minutes to let favors combine. For zucchini noodles 3-4 large zucchini 2 tablespoons olive oil Peel zucchini and the cut with a mandolin or by hand into small noodle like strips. Sauté in a sauce pan with olive oil until soft, but not too soft because they will get mushy.
