1 butternut squash
2 tablespoons olive oil
1 onion, chopped
1 lb grass fed ground beef
1 14.5 oz can diced tomatoes
1 14.5 oz can tomato sauce
Salt and pepper
1 tsp Cajun seasoning
1 tsp oregano
Preheat oven 400
Start by browning the meat and onion in the olive oil in a large skillet. Season meat with salt and Toni's. Once the meat is brown add the diced tomatoes and the tomato sauce. Then season with the oregano. Cover and let simmer about 20 minutes.
Peel the butternut squash and remove seeds. Slice butternut squash into large flat pieces ( like a lasagna noodle). Get an 8x8 inch baking dish. Layer the meat mixture and butternut squash until the dish is full.
Bake 50-60 minutes. You want to make sure squash is soft.
Let cool for 20 minutes before you serve.
This looks great! Do you think it would freeze well? I’m trying to stock my freezer with some meals. Such a busy time of year!
Yes, I definitely think it would.
Made this last night & it was awesome!! My kids each had seconds:) I am so glad you have started this blog. We are not strict Paleo at our house, but try to cut out carbs & processed foods. All of your recipes show great ways to “sneak” those veggies in & provide healthy meals that the kids actually enjoy!
Have you ever added cheese? Wonder what type cheese would taste the best with squash?
I haven’t, but I would imagine that any cheese would be delicious. Goat cheese, mozzarella or Parmesan sounds good to me.
This may be silly, but what is Toni’s? And where can I get it? I keep seeing it in your recipes.
Not silly at all. I get asked about it all of the time. Toni’s is basically a Cajun seasoning. If you don’t have it, you can also just use an all purpose seasoning.
Toni Chachere;s Creole Seasoning. In most spice sections.
I made this the other night and LOVED it! Better than regular lasagna to me 🙂 Based on your posts, you must be from Louisiana or somewhere in the south…Tony’s seasoning, king cake, jambalaya. I’m in New Orleans, if you’re local shoot me an email! I’d love to chat! Thanks 🙂
So glad you liked the lasagna. It is definitely delicious with butternut squash. Yes, I’m from louisiana. I actually live in Alexandria. I cannot tell you how many emails I have gotten asking what Toni’s seasoning is. I have to remind myself that it’s a southern thing!
Thanks for your recipes! I miss eating my old foods but it helps seeing your recipe that are really comfort foods made healthy! Thanks for helping me not to feel so deprived when i want those foods! Please keep the recipes coming!
Tonight was my second time making this dish. I just LOVE IT! Even better, my kids like it too!!! Keep the recipes coming!
Are you supposed to cover this when baking? Making tonight – can’t wait to try it! Thanks for the recipe!
No, you don’t have to cover it. Enjoy!
