Butternut squash lasagna

 
So I have made it to day 21 on whole30. I'm in the home stretch. I started my day today with eggs and bacon, I had 2 left over burger patty's for lunch, and a peach and some trail mix to snack on. I made this delicious butternut squash lasagna for dinner and I have to say it really was awesome. I'm thinking about making it again this week it was so good.

1 butternut squash
2 tablespoons olive oil
1 onion, chopped
1 lb grass fed ground beef
1 14.5 oz can diced tomatoes
1 14.5 oz can tomato sauce
Salt and pepper
1 tsp Cajun seasoning
1 tsp oregano

Preheat oven 400
Start by browning the meat and onion in the olive oil in a large skillet. Season meat with salt and Toni's. Once the meat is brown add the diced tomatoes and the tomato sauce. Then season with the oregano. Cover and let simmer about 20 minutes.
Peel the butternut squash and remove seeds. Slice butternut squash into large flat pieces ( like a lasagna noodle). Get an 8x8 inch baking dish. Layer the meat mixture and butternut squash until the dish is full.
Bake 50-60 minutes. You want to make sure squash is soft.
Let cool for 20 minutes before you serve.

    Made this last night & it was awesome!! My kids each had seconds:) I am so glad you have started this blog. We are not strict Paleo at our house, but try to cut out carbs & processed foods. All of your recipes show great ways to “sneak” those veggies in & provide healthy meals that the kids actually enjoy!

    Have you ever added cheese? Wonder what type cheese would taste the best with squash?

      I haven’t, but I would imagine that any cheese would be delicious. Goat cheese, mozzarella or Parmesan sounds good to me.

      So glad you liked the lasagna. It is definitely delicious with butternut squash. Yes, I’m from louisiana. I actually live in Alexandria. I cannot tell you how many emails I have gotten asking what Toni’s seasoning is. I have to remind myself that it’s a southern thing!
