I found this recipe on pinterest the other day. I added the carrots and changed a few of the seasonings, but it turned out really good.
You will need
3-4 lb pot roast
3 large onions, cut into large slices
1 bag of baby carrots
Sea salt
Garlic powder
Toni's seasoning
1/2 cup balsamic vinegar
1 cup beef broth
1 can diced tomatoes
Season roast with sea salt, pepper, Toni's, garlic salt. Heat a small amount of olive oil in a heavy sauce pan and brown roast all over. While roast is browning add 1 cup of beef broth to the sauce pan. Let it come to a boil and cook until it cooks down to about 1/2 a cup.
While roast is browning and broth is cooking, chop onions and place at the bottom of the slow cooker with a bag of mini carrots.
Once the broth has cooked, remove the roast and put it in the slow cooker on top of the onions and carrots. Next, add 1/2 cup of balsamic vinegar to the sauce pan with the beef broth, and one 14.5 oz can of diced tomatoes. Let cook together for a few minutes.
Next add the sauce to the slow cooker. Let cook for 6-8 hours
