Yesterday was my 33 rd birthday. I had a vey interesting birthday this year. Having run the Boston Marathon 2 years ago, the explosions yesterday hit pretty close to home, and one of my best friends was actually running in the race. I spent the morning online tracking her, and when she finished I quickly began to text her to congratulate her. We communicated back and forth for about 15 minutes, and then I had to go pick up the kids at school. On my way to school I heard about the explosions and immediately called her....... It went straight to voicemail, so I called and texted again and again. For about an hour I couldn't get in touch with her, but soon found out that her and her father were safe!!! Thank god!!! This tragedy is horrific and I am so saddened by what has happened. Such a wonderful event that people work so hard to get to, turned into heartbreak. I continue to pray for all of the victims of this event.
Last night my family got together and my mom made me a delicious paleo meal to celebrate my birthday, and an even more delicious paleo birthday cake. I just had to share the recipe.
To make the cake:
1 cup coconut oil
1/2 cup honey
1 cup shredded unsweetened coconut
1 tablespoon vanilla
1 tsp baking soda
1 tsp sea salt
10 eggs
3/4 cup coconut flour
For the icing:
1/2 cup coconut oil
1/4 cup honey
1 tsp vanilla
3/4 cup cocoa powder
Pinch of salt
1. Preheat oven to 325
2. In a small bowl sift together coconut flour, salt, and baking soda
3. In a large bowl combine eggs, vanilla, honey, and melted coconut oil
4. Add dry ingredients to wet ones and mix well
5. Grease two 9in baking pans, and pour batter into pans
6. Bake for 35 minutes
7. Remove from oven and let cool before frosting
8. Mix all icing ingredients together until they are smooth.
9. Spread icing between cake layers and then on top
Katherine, where do you and your mom buy your coconut flour? Here at Krogers? What brand do you use? What about coconut oil? Do you also get that locally?

Yes I get my coconut flour at Kroger. I get the Bob’s red mill brand in the organic section. I also get my coconut oil at Kroger in the same section.

For the frosting, do you melt the coconut oil or leave it in solid form? I am having a hard time finding a good frosting for cake.

I usually put mine in the microwave just to soften it a little. I don’t completely melt it though.
Thank you for this recipe! It’s easy and came out great. When making the frosting, I put all of the ingredients in a small stainless steel bowl (glass would work too) and sat it in bowl of hot water while I mixed by hand. The hot water softened the coconut oil quickly and I pulled it out before it got too melty to spread. Love your website 🙂
