Tuna Salad

 
Thursdays are our designated crossfit rest day, so instead of my regular WOD, I decided to go on a bike ride. I got a new road bike for my birthday this year in April, and have yet to use it.  I went out with a friend for a good 1 hour ride and despite the 90 degree temp, it felt great. Luckily, being clipped into the bike for my first time ever did not turn into a total disaster, and although a dog did run at us once, we yelled at him and he ran away quickly. After my workout I did my daily grocery shopping. I'm in the grocery store basically everyday, and today I found that they are remodeling  the produce department and adding more organic fruits and vegetables. This is a big step for our small town, but we are constantly growing and healthy eating is becoming more of a concern to many. EXCITING! I came home and made tuna salad. I have a great paleo friendly tuna salad recipe from Melissa Joulwan, The Clothes Make the Girl. You're the top tuna salad 2 cans of tuna 1 small diced apple a few scallions, green tops only 1 celery stalk 1 oz pecans 2-3 tablespoons of homemade mayo salt and pepper to taste
