We got home from California on Monday. Our weekend at the crossfit games was incredible. The group from our gym that went was so much fun and we are already planning our trip to the games next year. I have said this before and will say it again, my crossfit family are my best friends, and the community that crossfit creates is something you don't find at any other gym.
My trip to California was mostly paleo, but of course there were some cheats. I had some delicious food and saw some pretty incredible athletes. We had dinner in Beverly Hills at Spago and got to meet Wolfgang Puck himself, I visited Crossfit South Bay in Hermosa beach one morning, had lunch at the Ivy in Beverly Hills, and tried a new spinning class called Soul Cycle one morning in Brentwood. In between all of my eating and working out, I watched almost all of the events at the 2013 Crossfit Games. Every one of those athletes never ceases to amaze me. Crossfit is a sport of such strength, stamina, and endurance and it continuously amazes me to watch what these incredible athletes can do. So now it's back home, and back to cooking for the family.
After dinner tonight my husband kept asking what we could eat for dessert. In the back of my mind I was thinking the same thing. I went in the kitchen and pulled out what I had. I found a recipe for an apple crisp in Paleo Comfort Foods, I changed a few things, and this is what I came up with. I know it looks like mush in the picture, but it was very good mush.
To make the strawberry crisp:
1 16oz container of strawberries ( stems removed and cut in half)
1 cup almond flour
1 cup Steve's paleo crunch
2 teaspoons cinnamon
1/3 cup coconut oil
4 tablespoons maple syrup
2 teaspoons vanilla extract
1. Preheat oven 350
2. In a bowl combine almond flour, Steve's paleo crunch, and cinnamon
3. In a separate bowl combine coconut oil, honey, and vanilla
4. Mix together to form a clumpy mixture.
5. In a 9x9 baking dish place strawberries on bottom then place crunch mixture on top of strawberries
6. Bake 35 minutes.
