Saw Giada cook this on the food network and I just had to convert it to paleo to try it. It does have cheese so it isn't 100% paleo, but you could easily remove the cheese and it would be good.
You will need:
1 medium- large spaghetti squash cooked and scraped into bowl
2 cloves finely minced garlic
Olive oil
1 large bag of spinach, chopped
12 oz cherry tomatoes
Salt
Black pepper
1 cup Parmesean cheese
1 cup asiago cheese
1. Start by cooking your spaghetti squash, scrape it out and put in a bowl to the side
2. In a large skillet warm olive oil and garlic.
3. Once that starts to cook, add chopped spinach and let cook for a few minutes.
4. Once spinach starts to wilt, add cherry tomatoes
5. Let cook a couple of minutes and add salt and pepper
6. Remove from heat, toss in spaghetti squash and cheese.
7. Serve
