Sirloin steak, butternut squash and asparagus

 
Today is day 2 of whole30, and everything is still going great. I do feel kind of hungry all the time, but I think it is mental because I am definitely eating plenty of food. For breakfast I had 2 scrambled eggs and 2 pieces of whole30 approved bacon, for lunch I had a baked sweet potato topped with grilled chicken, and grilled onions. I had a few snacks throughout the day: some cantaloupe, some raw cashews, and I sautéed a plantain in coconut oil in the skillet and put a little salt on it (seriously, it was one of the best things I've ever eaten). Tonight's dinner was great. We had gotten a grass fed sirloin steak from the market this weekend, so I decided to cook it. Then I wrapped some asparagus in some whole30 approved prosciutto and oven baked some butternut squash. For the sirloin: I simply seasoned it with salt, pepper and coconut aminos and we grilled it outside. The asparagus: I wrapped each asparagus individually with 1/2 a piece of prosciutto, topped with olive oil, salt and pepper, and baked at 400 for 10-15 minutes The butternut squash: Peel the skin off, cut into cubes, place on a baking sheet, toss in olive oil or coconut oil. Next season with salt and pepper and bake at 400 for 30 minutes. Very simple meal and extremely delicious. This picture doesn't do the steak justice, it was really good, but it looks really pink in the picture.
