Rutabaga and caramelized Onion Casserole

I need to apologize for the lack of recipes lately. I've got 10 more days until I move, and I promise I will start cooking up a storm. Everything is packed and all over the place, so I haven't been cooking as much. This past weekend we went to Baton Rouge to run the Louisiana half marathon. The weather was perfect and the race course couldn't have been any better. I hit up whole foods and bought these rutabaga. I haven't cooked with them in a while. in the picture it looks like just onions, but I promise, the rutabaga is under there, and it is GOOD! This was a winning recipe with my entire family. My kids thought they were eating mashed potatoes.

4 rutabagas, peeled and cubed
16 oz chicken broth
2 cloves minced garlic
1/4cup ghee
1/4 cup coconut milk
Olive oil
1 onion, thinly sliced
Salt and pepper

1. In a saucepan combine cubed rutabaga and chicken broth. Bring to a boil and let boil 10 minutes. Reduce heat and let simmer 30 minutes. Drain
2. Transfer rutabaga to bowl and add 1/4 cup ghee, coconut milk, garlic, salt and pepper. Mash together. (I used my electric mixer)
3. Add olive oil to skillet and onions. Let cook until onions are golden brown and Caremelized. I usually have to cook mine at least 15 minutes on a medium heat.
4. now pour mashed rutabaga into casserole dish and top with onions.
5. Preheat oven to 375 and bake uncovered for 25 minutes.
