Roasted sweet potato salad
This salad is awesome. It's officially one of my favorite salads now. You could add a little grilled chicken to it and have a little protein with it. To make it you will need:
1/2 cup cranberries,
1/2 cup of juice from an orange or satsuma,
2 lb sweet potatoes peeled and cubed,
3-4 tablespoons of white balsamic vinegar,
3-4 tablespoons white balsamic vinaigrette( make using olive oil, salt and pepper, Dijon mustard, and white balsamic vinegar),
4 peeled shallots,
2 tablespoons olive oil,
1 bunch of arugula,
1/3 cup toasted walnuts,
4 slices of cooked bacon crumbled.
1. Heat oven to 400.
2. Put cranberries in a small bowl and pour orange juice on top of them. Plump them in the microwave for 1 minutes.
3. In another bowl combine sweet potato cubes, shallots, olive oil, white balsamic vinaigrette, salt and pepper.
4. Spread the sweet potatoes and shallots on a lined baking sheet and roast stirring occasionally, until they are tender and just cooked through. About 25-30 minutes.
5. Toss greens in a bowl with cranberries, sweet potatoes, shallots, walnuts,white balsamic vinegar, and salt and pepper.
6. Toss greens in a bowl and top with crumbled bacon.
