Roasted plantain and sweet potato mash

 
I've kind of had an obsession with plantains lately and I've always had one with sweet potatoes, so when I saw this recipe on another blog that I follow, girlmeetspaleo, I knew I had to try it. You will need: 2 ripe plantains ( not green ones) 2 medium sweet potatoes 1 tbsp + 1 tsp coconut oil 1/2 cup coconut milk 1/2 tsp cinnamon Salt to taste Preheat oven 375. Peel plantains and chop into chunks. Peel sweet potatoes and dice( should be smaller than the plantain chunks). Toss plantains and sweet potatoes in 1 tbsp melted coconut oil and place on a sheet. Bake about 35 minutes or until both are fork tender. Remove from oven and dump into a large mixing bowl. Add remaining 1 tsp coconut oil, coconut milk, cinnamon and salt. Mash until desired consistency is reached. Add more coconut milk if necessary.
