Pork chops over mashed rutabaga

 
I picked up some fresh pork chops at Inglewood this week when I was getting my weekly box of vegetables. I've been excited to cook them ever since because I want to see how different they taste from regular store bought pork chops. I also got some more rutabaga to make the mashed rutabaga to put under my pork chops. The meal was delicious, and I will forever be buying all of my pork locally at Inglewood. Next time I'm going to try their pork ribs.
To make the pork chops you will need:
4 pork chops
Salt and pepper
1/2 cup Dijon mustard
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon thyme
1 clove minced garlic
1 tablespoon coconut oil

1. Preheat oven to 425. Start by seasoning pork chops with salt and pepper
2. In a separate bowl mix mustard, honey, garlic powder, thyme, and minced garlic.
3. Rub seasoning mixture all over pork chops.
4. Heat coconut oil in large skillet and brown each pork chop on each side about 2 minutes per side.
5. Now transfer your skillet into the oven and let cook 8-12 minutes.
6. Follow recipe for mashed rutabaga, and serve with pork chops.
