Paleo pumpkin cake

 
This is a recipe that I found on pinterest and I am attempting to convert it to paleo. It originally uses condensed milk, sugar, and cake mix, but I converted it to paleo. I want to make it for my Halloween party later this month, so I tested it out today to make sure it is good. I decided after I made it that it would be better as a side dish for thanksgiving rather than a dessert. It was very good, just not very sweet. You will need: 1 can coconut milk 1 can of pumpkin purée 1 tsp vanilla 3 tablespoons honey 3 eggs 3 tsp cinnamon 2 cups almond flour 1 tsp baking soda 1 cup pecans 1 cup melted coconut oil Preheat oven 350. Spray a 9x13 in baking dish with non stick spray. In a bowl combine pumpkin, coconut milk, honey, eggs, and cinnamon. Pour mixture into baking dish. Mix almond flour, pecans,and baking soda together and sprinkle on top of mixture in the baking dish. Pour melted coconut oil on top and bake 45 minutes.

    Where can you find canned coconut milk.?

      They have it in the organic food section, but you can also find it in the oriental foods section of the grocery store.
