1 1/4 cup almond flour
1/4 cup flax-seed meal
1/4 cup shredded unsweetened coconut
1/2 tablespoon cinnamon
1/2 tsp salt
1/2 tsp baking soda
1 egg
1/4 cup maple syrup
1/2 tsp vanilla
1/4 cup coconut oil
pre heat oven to 325, mix all ingredients together, place in spoonfuls on cookie sheet and bake for 10 minutes

I just made these, used 2T per cookie and only got 6 cookies, but they are tasty! I topped one with sunbutter, and I’ve been craving a PB&J sandwich lately, these would be fantastic as a sub!
