You will need:
For the chicken
6 boneless skinless chicken breast,
Salt and pepper,
Cumin,
Garlic powder,
Toni's,
Olive oil.
Soup:
2 tablespoons olive oil,
2 cloves garlic,
1 onion, chopped,
1 red bell pepper, chopped,
1 yellow bell pepper, chopped,
1 7oz can of diced green chile peppers,
1 28 oz can of fire roasted tomatoes,
32 oz of chicken broth,
1 tsp cumin,
1 tsp salt,
1 tsp garlic powder,
2 tsp chili powder.
Start by seasoning 4-6 boneless skinless chicken breasts with olive oil, salt, Toni's, garlic powder, and cumin. Bake at 375 for 30 minutes. When chicken is done, shred it with a fork into a bowl. While chicken is cooking start to make soup. Pour olive oil into large soup dish. Add garlic, onion, red bell pepper, and yellow bell pepper. Once they start to cook together add diced green chile peppers. Next add 1 can of fire roasted tomatoes. Add cumin,salt, garlic powder, and chili powder. Now add chicken broth. Once everything is combined put shredded chicken in soup, cover, and let simmer for 30 minutes.
