Blueberry coconut crumb muffins.
Some mornings I just don't have time to make myself eggs and bacon. I get rushed making lunches and getting kids dressed. I know I've got to eat because breakfast is the most important meal of the day, so I need something that I can grab and go. I love my paleo blueberry muffin recipe that I got from paleomg, but I found this one and wanted to see if I liked it. It's made almost completely different than the other paleo muffin. It's definitely a winner. I think it's the coconut milk in it that makes them so delicious.
To make you will need:
1 cup almond flour,
1/4 cup coconut flour,
1/4 tsp baking soda,
1/3 cup unsweetened coconut flakes,
1 tsp vanilla,
2 eggs,
1/4 cup honey,
1 cup blueberries,
1/2 cup water,
1/2 cup coconut milk.
For the crumb topping:
3 tablespoons almond flour,
2 tablespoons coconut flakes,
2 tablespoons coconut oil,
1 tsp honey,
Pinch of salt.
1. Start by preheating oven to 350.
2. Combine all dry ingredients in a large bowl. Then add eggs, vanilla, water, honey, coconut milk, and blueberries. Mix well.
3. pour batter into greased muffin tins.
4. In a small saucepan over medium heat melt coconut oil. Add coconut, almond flour, salt, and honey. Mix well until it clumps together.
5. add crumb mixture to the top of each muffin.
6. Bake for 20-25 minutes.
