Paleo 4th of July

Our 4th of July this year was very low key, but perfect. My husband and I went to crossfit in the morning, we hung around the house with the kids swimming all day, and then decided last minute to cook a big dinner. My friend Janelle came over to eat and brought some delicious paleo food with her. I have to say that every time Janelle comes over, she never disappoints with the food that she cooks. I always know that whatever she brings is going to be delicious. We had burgers wrapped in lettuce with grilled onions, tomatoes, and topped with paleomg's Grilled Bacon Guacamole and Avocado Red Pepper Sauce. All of us agreed that it was one of the best burgers that we have ever had. The combination of the onions, red pepper spread, and bacon guac turned our average burger into an extraordinary burger. We also had some homemade baked sweet potato fries, and sautéed squash. We ended the night shooting some fireworks, and the kids jumped in the pool for some night swimming while we watched fireworks over the field behind our house. It ended up being a great day.
Happy 4th of July!
