Fried Green Tomatoes

 
Fried Green Tomatoes

We went out to our local farmers market yesterday and picked up some goods to cook for dinner. We got green tomatoes, kale, carrots, beets, broccoli, eggs, and some fresh shrimp. So, for dinner I made BBQ Shrimp, and fried green tomatoes.

To make the tomatoes:
4 or 5 green tomatoes sliced
2 eggs beaten
1 cup almond flour
1 tablespoon garlic powder
1/2 tsp salt
1/2 tsp pepper
Pecan oil or olive oil

1. In a bowl combine almond flour, garlic powder, salt, and pepper
2. Cover bottom of large skillet with oil, and heat
3. Dip each individual sliced tomato in egg mixture and then coat in the flour mixture on both sides
4. Place tomato in heated oil and cook on both sides until crispy
5. Do this to all tomatoes

* if I wasn't on whole life challenge I would make a dipping sauce with paleo mayo and ketchup combined!! I know that would taste delicious on top.
