My friend made some of these a couple of days ago and they were delicious. They taste just like an almond joy. I knew my husband would like them because his favorite candy is Almond Joy......so I made some today.
To make:
2 cups shredded coconut flakes
5 tablespoons coconut oil
4 tablespoons maple syrup
1 tsp vanilla
4 oz dark chocolate chips
1. Start by placing coconut in food processor and pulsing until it because the consistancy of coconut flour.
2. Now in a bowl combine coconut, maple syrup, coconut oil, and vanilla and stir until it islike a paste.
3. On a baking sheet lined with wax paper roll the coconut paste into a ball and place on wax paper.
4. Now place in the refrigerator for 15-20 min to harden
5. While they are in the fridge melt dark chocolate in a bowl in the microwave.
6. Once chocolate is melted, take coconut out of the fridge and roll in the dark chocolate.
7. Place back on baking sheet and put in refrigerator until ready to eat.
