It's been raining most of the day and it's starting to get cold. It feels like the perfect time to make some soup.I didn't have time to go to the store so I kind of just threw some things in the crockpot that I had in my kitchen. It turned out great!
To make you will need:
2lbs Boneless skinless thin chicken breasts
1 onion, chopped
1 4oz can green chili peppers
1 yellow squash, chopped
1 zucchini, chopped
1 4 oz can tomato paste
1 14 oz can diced tomatoes
1 32oz box of chicken broth
1 tablespoon cumin
1 tablespoon chili powder
Salt and pepper
Sliced avocado
1. Chopped onion, squash, and zucchini
2. Add all ingredients to crockpot, turn on and let cook for 6 hours
3. Top with sliced avocado
