Crock Pot BBQ Ribs

The weekend was wonderful. The Battle of the Fittest crossfit competition was awesome, and the cookie sales were great! I met so many awesome people sitting at my cookie table and selling in between workouts. Once again the community of crossfit never dissappoints. Crossfit Alexandria came together to put this competition on and it went off without any problems. The venue was good, the food was great, and the WOD's were great. There were 190 teams of two competing overall, so it was a lot to organize. My partner and I did great in the competition. Doing 4 WODs in one day was tough, but I simply love anything tough. I am so sore and I can barely walk today and it is all worth it.
For Labor Day we hung out by the pool and ate good paleo food. I never cook ribs, really because they kind of intimidate me to cook. Every recipe I find either looks to time consuming, or just not that good. This one that I made is neither of those. It's super simple and super delicious. I just let them cook all day and they were falling off the bone when it was time to eat.

1 onion chopped
4 lbs of beef ribs( I had to packs of 4 ribs)
1 tsp sea salt
2 tsp garlic powder
2 tsp chili powder
2 tablespoons apple cider vinegar
1 6 oz can of tomato paste
1/4 cup coconut aminos
1/4 cup honey

1. Chop onion and place in bottom of crock pot
2. In a small bowl mix salt, garlic powder, and chili powder.
3. Season ribs with seasoning mixture and place on top of onion in the crock pot
4. In another small bowl mix vinegar, tomato paste, coconut aminos, and honey.
5. Pour tomato paste mixture on too of ribs
6. Cover and cook for 6-8 hours on low.

    What are coconut aminos? And where would I find them? Looks delicious!!

      Hey-
      Coconut aminos are basically a coconut based soy sauce. They sell them at whole foods. I’ve had a lot of people ask where they can get them so I added a link on my web page to buy them from amazon. If you scroll down a little you will see it on the right side. Hope that helps

    Are you using flanken beef ribs? Our local store is selling the long beef ribs, but it looks like there is a lot of fat on them.

      For this particular recipe I used the long beef ribs, but that was only because that’s what I had. I think the short ribs would be even better. There was too much fat on the long ones I had also.
