Chocolate cake in a mug

 
Our trip to Colorado is coming to an end. Spending 5 days in the mountains with temperatures between 50 and 75 degrees will make you not want to go home to the 90-100 degree temps. We had a great trip and ate some delicious food. We dined at the world famous Nobu Restaurant in Vail. The food at Nobu was unbelievable and my 6 year old was scarfing down black cod, tuna tartare, and shrimp, so that made me very happy. We also went to the Vail Dance Festival and got to see the New York City ballet perform and some other incredible dancers. We hiked, shopped, ate, and I even got to go to Crossfit Venture and be coached by Natalie McLain, who competed at the games last weekend in California. What a wonderful vacation it was and now it's time to get back to reality. School starts next week and it will be time to get back in my routine.

This is one of the greatest recipe inventions EVER!! After finishing my whole30, this is the first thing sweet that I made. It's paleo, but it's probably not something you want to eat every day. I got this recipe from my friends blogs The Kettle Belle Diaries. It takes 1 minute to make.

2 tablespoons almond butter( I used crunchy)
2 tablespoons maple syrup or honey
1 1/2 tablespoons cocoa powder
1/2 tsp baking powder
1/2 tsp vanilla
1 egg
Dash of salt

Microwave for 45-60 seconds

    Oh how this has hit the spot perfectly! Thanks to evil hormones I am craving chocolate in a bad way but can’t be trusted with anything in the way of a full recipe. Using what was on hand, I had to substitute agave for the syrup and it was a bit too sweet so it will take me several sittings to finish but ohhh….such a great little recipe. Thank you!

    Found this on pinterest and this is AMAZING. There was another GF chocolate cake in a cup recipe that I used to make when I got a chocolate craving (using almond meal). It was rather dry but it did the trick. THIS recipe however is just perfect – so moist. I love, love, love it!

    My husband and I are new to Paleo. I’m reading and studying and updating shopping list daily! I crave chocolate and we both love something sweet after our dinner. I found this “chocolate cake in a mug” recipe tonight after dinner and it sounded so easy, I made us one. It was easy and quick and SO good! Thanks for your recipe!
