I got this recipe from Paleomg. As usual, it was delicious. Her recipes never fail me.
To make you will need:
1 large spaghetti squash
4 pieces bacon, diced
1 lb boneless skinless chicken breast
Salt and pepper
1 tsp basil
1 tsp parsley
1/4 tsp thyme
1/2 tsp garlic powder
1/2 cup coconut milk
1. Preheat oven to 425 place chicken breast on a foil lined baking sheet. Drizzle chicken with olive oil, salt and pepper, and bake for 20 min.
2. While chicken is cooking, also cook your spaghetti squash. Cut in half, remove seeds, place on baking sheet and bake for 30 minutes
3. Now, place bacon in a skillet. Cook bacon until crispy and remove from skillet,set aside, and chop. Save bacon grease.
4. In remaining bacon grease, add coconut milk and seasonings and let simmer for about 5 minutes.
5. Place diced chicken in sauce, then add bacon to it, and finally scrape spaghetti squash into it. Mix well to coat with sauce.
6. Enjoy.
