I didn't post the broccoli salad recipe yesterday so decided to post it today. I got it from my friend
paleolithicMD. I had some leftovers of this for lunch today and it was just as good as it was yesterday.
You will need:
One head of broccoli cut into florets
2 tblsp Dijon mustard
3 tblsp balsamic vinegar
5 slices bacon
1/2 cup chopped pecans
1/2 cup raisins
2-3 tblsp olive oil
Salt and pepper
Put florets in a microwave bowl and cook for 90 seconds. Next, cook bacon in skillet until crispy. Remove pieces from skillet and place on a plate. Keep bacon drippings. In a large bowl combine mustard, balsamic vinegar, salt, pepper, and about 1/2 of the leftover bacon drippings. Whisk all together and add olive oil. Now add broccoli, pecans, crumbled bacon, and raisins . Stir to combine.
