This recipe kind of reminds me of my sweet potato hash, but I'm going with a thanksgiving theme this week, so I'm calling it stuffing. It would be a perfect alternative to the usual stuffing recipe or dressing recipe. If you didn't want to use sweet potatoes, you could use butternut squash, acorn squash, or even eggplant.
To make the stuffing you will need:
1 onion, chopped,
1 cup mushrooms,
2 lb ground beef,
3 sweet potatoes, peeled and baked until soft,
2 tablespoons olive oil,
2 cloves garlic,
3 eggs beaten,
1/2 cup chicken broth,
1 cup pecans,
Salt and pepper,
Tonis seasoning,
Preheat oven 375. Start by sautéing the onion and garlic in a large skillet in olive oil. Season with salt and Toni's. Let onions cook and begin to caramelize. Stir onions often so they don't burn.In a separate skillet begin to brown the meat while the onions are caramelizing.
Once the meat is browned set it to the side for a minute to cool. Once it has cooled,add your beaten eggs, chicken broth, sweet potatoes, pecans, and more seasoning to your meat. Add onions to mixture. Mix all together. Place all ingredients in a 9x13 baking dish and bake at 375 for 15 minutes.
