Beef and Bacon Meatloaf

Beef and Bacon Meatloaf

2lb ground beef
7 pieces bacon
1 onion chopped
1 yellow bell pepper chopped
1 egg
3 cloves garlic
1 1/2 tsp salt
1 tsp oregano
1/4 cup coconut aminos
1 6oz can tomato paste

1. Preheat oven to 350
2. In a large bowl combine beef, onion, bell pepper, egg, salt, oregano, 2 pieces of the bacon chopped, and half of the tomato paste.
3. Grease a loaf pan and add beef mixture to it
4. Now cut the remaining 5 bacon pieces in half and lay across top of beef mixture, tucking the ends into the side of the pan
5. Bake for 30 minutes.
6. While that is baking mix the rest of the tomato paste with the coconut aminos
7. Take meat out of oven and too with the tomato paste mixture and return to oven. Continue to bake for 40 minutes.
8. Serve over mashed cauliflower

    This was delicious, I used an organic form of Worcestershire and added some to both the meat and topping then slow cooked for eight hours in the crockpot.. Sooo delicious, doubled the recipe and made it for a work potluck, it disappeared!
