Baked chicken and eggplant

 
Today is whole30 day 9. It's starting to go by really fast and I think it just gets easier every day. Today for breakfast I had scrambled eggs, half of an avocado, and coffee with coconut milk, for lunch I had chopped beef and green beans, and a little bit of coconut butter, a pear, and a few dates for a snack. Tonights dinner was really easy. To make the chicken you will need: 4-5 boneless skinless chicken breast Balsamic vinegar Dijon mustard Salt and pepper Garlic powder Preheat oven 375 Place chicken breasts in baking dish. Top with balsamic vinegar, rub each breast with mustard, and top all with salt, pepper, and garlic powder. The amount of each depends on your chicken. Just use enough to coat it evenly. Then bake for 40 minutes in oven Eggplant and tomatoes You will need 2 tablespoons olive oil 3 Japanese eggplant, sliced 1 onion, chopped 1 can of diced tomatoes 1 clove garlic Simply sauté eggplant, onion, garlic, and diced tomatoes in olive oil in skillet until it is softened.
