Paleo Yogurt Parfait

I'm headed out of town tomorrow to go to a crossfit competition. Two other girls from our crossfit and I are competing together as a team on Saturday in the Gotcha 6 Garage Games Partner Throwdown. We have 7 teams competing from our box. It should be a blast!!
I made this yogurt earlier in the week, and I've had it for breakfast every morning. I just made another batch to bring with me tomorrow to have for breakfast before the competition. It's good stuff!

I recreated this recipe from the delicious raw yogurt that I got while I was in Florida. I didn't have measurements so I had to just play with it. I had never actually worked with a real coconut and I must say its pretty difficult. I had to use a hammer and a nail to get it cracked open initially. Totally worth it though.

To make yogurt parfait:
3/4 cup unsalted cashews, soaked in water for 20 minutes
1 cup coconut water
1 cup meat from inside the coconut
1 tsp vanilla.
Drizzle of honey

1. Start by cracking your coconut and draining the water inside into a small bowl
2. Now use a knife to cut out the inner meat of the coconut.
3. Pour soaked cashews, coconut water, coconut meat, and vanilla in a blender and mix well
4. Serve for breakfast or dessert with blueberries, blackberries, and strawberries. Drizzle honey on top.

    This was a lot of work, but I had a lot of fun trying to break open the coconut and get all the meat out. Mine turned out a bit thin after I whirled it up in the Vitamix, so I added a spoonful of coconut butter to thicken it up some. Thanks for the great recipe!

    Curious question your ingredients call for coconut meat but your direction says milk wanna double check the mistake, thanks
