Sunday morning breakfast

 
After my run this morning I got home and my husband had already put the eggs, mushrooms and spinach on the counter, along with a clean skillet on the stove. I took this as a hint that I would be making breakfast. We had 30 minutes to cook, eat, and get ready for church. I started by cooking some whole30 approved bacon. Then I used the bacon grease to scramble the eggs, mushrooms, and spinach. While that was cooking I grilled some plantains slices in coconut oil. It was the perfect breakfast.
