Spaghetti Squash Casserole

I have to say, I haven't made very many paleo casseroles. As I think about items to bring to a family holiday meal, the word casserole keeps coming to my mind. So I made this one tonight for dinner to test and see if it's would be good enough to bring for our Thanksgiving meal.

You will need:
1 spaghetti squash
1 lb of mild Italian sausage
2 cups of diced spinach
About 20 cherry tomatoes cut in half
1/2 red onion, diced
1 tablespoon minced garlic
1 egg
1 tsp garlic powder
1 tsp oregano
1/2 tsp onion powder
1 tablespoon olive oil
Salt and pepper

1. Preheat oven to 400. Now cut your spaghetti squash in half and removing the seeds. Place face down on a baking sheet and cook for 25 minutes
2. While that's cooking begin to brown the pork, garlic and onion in a skillet.
3. once pork is cooked and onion is translucent, add the spinach, tomatoes, and all seasonings.
4. Once squash is done begin to shred it with a fork into a 9x9 baking dish. Now mix in meat mixture and egg
5. Bake for 15 minutes at 400.

    Ok – so I saw that you cook your spaghetti squash face down – do you add water or anything to the pan?

    This sounds great. But to get it done faster, pierce squash with a knife and throw the thing in the microwave (whole) for 7-10 mins depending on size of the squash. Such a time saver! Oh and I will be trying this recipe for sure!

    Amanda, you don’t need to add anything to the pan. The squash has enough water content in itself to steam. Very simple!

    Is the egg required?

      It holds the casserole together, but honestly if for some reason you don’t like eggs, or can’t have them, I think it would be ok to leave it out.
