Shepard’s pie and day 1 of whole30.

 
Today I started my first day on whole30. It really wasnt bad. The only real change in my normal day was that I couldn't use coconut creamer for my coffee. I had hard boiled eggs for breakfast, tuna salad for lunch, a couple of kiwis, some almonds,and an apple for my snacks throughout the day, and finally dinner. All in all I'd say day one was good.
Tonight's dinner comes out of my new cookbook Well Fed by Melissa Joulwan. It was given to me by my next door neighbor paleolithicMD. I haven't always been a fan of shepard's pie because when I was in elementary school the cafeteria used to make a version of it that definitely did not look like the shepard's pie in Well Fed. But, because it looks so good in this cookbook I decided that I would try it, and I was glad that I did. I am officially now a big fan of shepard's pie. Oh yeah, and I didn't have lamb, so I used grass fed beef from Thomson grazers
Start by making cauliflower mashed potatoes
1 bag frozen cauliflower florets
1 garlic clove
1 1/2 tablespoons coconut oil
1/2 cup coconut milk
Salt and pepper

Cook cauliflower according to directions ( I just buy the steam in bag kind, and if not just steam a regular head of cauliflower)
Place in food processor. Add garlic, coconut oil( melted), coconut milk, salt and pepper. Purée.
Taste and adjust seasonings.

For the rest of the pie you will need:
1 1/2 tablespoon coconut oil
1 onion, diced
2 carrots, diced (about 1 cup)
2 cloves garlic
2 lbs ground lamb ( or beef)
Salt and pepper
1 tablespoon tomato paste
1 cup beef or chicken broth
1 teaspoon coconut aminos
3 egg whites
Paprika, for garnish

Preheat oven 400
Heat skillet, add coconut oil, onion, carrot and let brown
Now add garlic, and crumble meat into the skillet. Sauté until its cooked through.
Season with salt and pepper( I also add some Tony's)
Now add tomato paste, broth, coconut aminos, stir to combine, bring to a boil and then simmer until most of the liquid has evaporated. Set pan aside and let cool.
Scramble the egg whites until frothy and then blend them into the meat mixture
Now spread meat mixture evenly in 12x6 inch baking dish. Cover meat with cauliflower potatoes.
Bake 25-30 minutes.
