Paleo pumpkin pecan muffins

 
These muffins were a perfect start to a cool morning. You will need: 1 cup almond flour 1 cup canned pumpkin 2 eggs 1/4 cup almond butter 1 tsp baking soda 1 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp salt 3/4 cup chopped pecans Preheat oven 350. Mix all ingredients in a bowl well. Grease muffin pan with coconut oil or non stick cooking spay. Bake for 20-25 minutes. Let cool before eating. I know in this picture they don't really look that good, but I swear they taste really good.

    Shouldn’t these have just a little honey in them? There is no sweetener at all. Or maybe a few dried currants or dates would be enough. They are a little bland.

    I made them again today and put some Plum Amazings (chopped dried plums) in and subbed pumpkin pie spice for the cinnamon. That added just enough extra flavor for me. Thanks for the recipe!
