Paleo banana nut bread

I got this recipe from my friend Janelle. Anything that she has ever made for me has been delicious and this bread definitely is. It would be the perfect thing to have for Christmas morning breakfast, or even dessert.
You will need:
2 cups almond flour,
1 tsp baking soda,
1 tsp baking powder,
4-5 ripe bananas,
4 tablespoons honey,
4 tsp cinnamon,
4 eggs,
1 tsp vanilla,
1.5 cups walnuts.

1. Preheat oven to 350.
2. Mash bananas with a fork.
3. Add all other ingredients to bananas in a large bowl.
4. Grease a loaf pan with coconut oil.
5. Pour mixture into loaf pan and bake for 20-25 minutes.

      Hello, I am in the process of baking this banana cake but would you email me back and tell what size of a loaf pan that you used, I have an 8 1/2 by 4 1/2 by 2 1/2, yours looks bigger. Also, I just don’t have that many bananas and cannot use honey due to a Candida problem, I do have coconut sugar but then would I add some coconut milk to make up for the liquid that the honey has? Thanks

        My pan is 91/2 x 4 1/2x 2 1/2
        So it is a little bit larger. If you are going to use coconut sugar I don’t think you necessarily need to add coconut milk. Try it without and see what the consistency is like once you mix all ingredients. Good luck. Let me know how it turns out.

    I have a child who is allergic to nuts and seafood. Other suggestions instead of almond flour?

    I just made the bread and let it cook for 25 minutes did the toothpick test and the toothpicks came out clean. I left the bread in aluminum foil bread pan that it was cooked in. I went to the store and came back about 20 min later and the bottom of the loaves are soggy and one of the loaves the center caved in and is soggy in the center. Any ideas?

      Hey
      Oh no! The only thing I can think of is to try cooking just a little bit longer without over doing it next time. Does it taste ok? The best way I would think to work with what you have now is to slice the bread, and toast it in your oven on broil for about 5 minutes. That might crisp it up a bit.

    Going to do this right now! Have been on Whole30 for 50 days and now that I am off all dairy and grain, I think this will be a nice addition. Also, looking for “lunch box” ideas for myself that don’t look too juvenile. Thanks for the recipe.
