Paleo Almond Joy

 
Paleo Almond Joy

If you are anything like me, you want something sweet to eat while your kids are chowing down on their Halloween candy. We had our annual Halloween neighborhood get together and the food was delicious. I made chili, and a friend brought paleo jambalaya, and these DELICIOUS paleo almond joys. They were so good, I wanted to eat them all. She shared the recipe and of course I am sharing it with you.

To make you will need:
1 1/2 cups shredded unsweetened coconut
1/2 coconut cream concentrate ( or coconut butter)
1/2 cup coconut oil
1 tsp vanilla
Pinch of salt
1 bag of enjoy life chocolate chips( or the darkest you can find)
Whole almonds

1. Throw the shredded coconut, coconut cream, coconut oil, vanilla, and salt into the food processor.
2. Blend until slightly chunky then place in mini cupcake liners. Spoon enough into the, to make them 1/2-3/4 of the way full.
3. Now place an almond in each one.
4. Now melt your chocolate. Either in the microwave, or use a double boiler to melt it.
5. Now spoon chocolate over the coconut and almond in each mini cupcake liner.
6. Place in freezer until chocolate is frozen.
7. Take out and enjoy

    What is the amount for the coconut butter? These sound amazing!

    I just made a version of these using honey and some almond extract instead of vanilla and they were delicious. I will definitely have to try these.
