No Bake Strawberry Bars

 
Paleo No Bake Strawberry Bars

If you haven't tried any of the desserts from PaleOMG then you are missing out. Everything I have ever made by her has been so good. These bars are no exception. Her recipe for these bars uses blueberries and blackberries. I just had strawberries, so that's what I used.

To make the crust:
12 dates, pits removed
1 cup cashews
2 tablespoons almond butter
1 teaspoon cinnamon
Pinch of salt

For the topping:
About 15-20 small strawberries with the stems removed
1/4 cup maple syrup
1/4 cup coconut butter
Sprinkle of cinnamon
Pinch of salt

1. First make your crust. Put all ingredients for crust in the food processor and mix.
2. Put crust ingredients in a bread pan and press down to evenly distribute
3. Now heat up a small sauce pan under medium heat. Add strawberries and maple syrup.
4. Once they begin to heat up and are almost like a runny jam, add your coconut butter, cinnamon, and salt.
5. Remove from heat and pour on top of crust.
6. Refrigerate for 30-45 minutes and then cut into squares.

    What is coconut butter?

      Coconut butter is a creamy blended coconut. It is sold in most grocery stores right next to the almond butter and peanut butter. Its more of a creamy consistency of coconut.
