Meatloaf and mashed Cauliflower

 
Every meatloaf recipe that I looked up called for almond flour, and since that is a no no on whole30, I came up with my own version of paleo meatloaf.
For the meatloaf you will need:
2 tablespoons olive oil
2 lb ground beef
1 egg
1 onion, chopped
1 large carrot, chopped
1 tsp oregano
3 cloves of garlic
1 1/2 tsp salt
1 6 oz can of tomato paste
1/4 cup coconut aminos
Preheat oven 350.
In a large bowl combine beef, carrot, onion, garlic, egg, oregano, salt, and 1/2 can of tomato paste.
Grease a loaf pan with either olive oil or coconut oil
Pour meat mixture into loaf pan and bake for 20 minutes.
While its baking, in a small bowl combine rest of tomato paste, and coconut aminos ( if you are not on whole30, I would also put some honey in this mixture)
Take loaf pan out and spread tomato paste/ coconut aminos mixture on top.
Bake another 40 minutes.

While the meatloaf is cooking make the cauliflower mashed potatoes
You will need:
1 head of cauliflower
1 clove of garlic
1 1/2 tablespoons coconut oil
1/2 cup coconut milk
Salt and pepper

Steam cauliflower, then purée in food processor with garlic, coconut oil coconut milk, salt and pepper. Mine weren't smooth enough so I added a little bit more coconut milk, and I also added some Tony's seasoning to them.

    Looks awesome, but where can you find tomato paste without sugar?

      Hey
      The tomato paste that I used actually came from a specialty cooking store that I go to. The brand is Amore Italian tomato paste. Hope that helps.

      Thanks. Coconut aminos are like a paleo soy sauce. It tastes just like soy sauce, but is made from coconut. It’s very good

    Hey! Recipes sound great and I am making them tonight! However I wanted to add that you CAN have almond flour as long as you’re not using it for Paleo sweet treats on Whole30 🙂 See below for confirmation!

    Almond Flour: Yes

    Yes, you can have almond flour, coconut flour, tapioca flour, and other non-grain-based flours, but it’s context-dependent. You can use it in place of breadcrumbs in your meatballs, to dredge a piece of chicken, or to thicken a sauce or stew. You may not use it for Paleo baking—to make muffins, pancakes, bread, cupcakes, cookies, waffles, biscuits, tortillas, pizza crust, or anything of that nature. We call those recipes Sex With Your Pants On (SWYPO) foods, and they are expressly off-limits during your Whole30.
