Key Lime Pie

 
Paleo Key Lime Pie

One of the owners of our crossfit had a dinner tonight for all of the coaches. We are like a big family and getting together is always fun. It's wonderful to be a part of a community that's so supportive of one another and has so much in common. There's never a dull moment. I swear I really love every single one of these people. If you haven't tried crossfit, get to your nearest gym and try it. Not only will you get the best workout of your life, but you may find a new family. We had a delicious paleo meal that included roasted red pepper dip, chicken and broccoli casserole, chocolate chip cookies, pound cake, green beans, brisket, deer sausage, kale salad, and of course key lime pie. After our meal we played charades. I don't think I have played charades in at least 15 years, and I must say it was a blast.
I brought a dessert for the meal. I wanted to bring something different that I have never made before. I love key lime pie, so I decided to make a paleo one. It was pretty good, but my friend made lemon pound cake, and it was seriously the best paleo dessert I have ever had. The key lime pie was good too, so if you love key lime pie like I do, then you should try this recipe.

For the crust:
6 pitted dates
1.5 cups unsalted almonds
1.5 tablespoons coconut oil, melted
Pinch of sea salt

For the filling:
4 tsp lime zest
1/2 cup lime juice
4 tablespoons honey
1 cup canned coconut milk
3 eggs

1. Per heat oven to 350
2. In a food processor mix all crust ingredients until they are the consistency of almost a nut butter.
3. In a pie pan, spray with a non stick cooking spray and then press crust ingredients onto bottom of pan
4. Bake 6-8 minutes
5. While that's baking, mix all filling ingredients. Then pour on top of crust
6. Bake for 25-30 minutes.
7. Let cool, even refrigerate if you have time before serving.
