Holiday Paleo Desserts

Last night I participated on our local Junior Leagues Sparkle and Spirits. It was basically their November meeting, but they also had tables set up for the members to walk around and sample things. I set up a paleo holiday dessert table. I made three different paleo desserts for them to sample. I think all of the ladies enjoyed it, and most were very surprised at how delicious a paleo dessert can actually be.
The first dessert that I made is a combination of a few paleo recipes that I found. As you can see by the ingredients they are definitely a paleo "treat", and not something you will want to eat everyday, but perfect for a holiday gathering.

The next dessert that I made were on my blog a few weeks ago and everyone seemed to like them. They are the Cinnamon Pecan Pumpkin Muffins

Finally I made Dark Chocolate Almond Butter Bites

To make all you need is:
1 bag of dark chocolate chips
Almond butter

1. Melt chocolate chips over a double boiler on the stove top
2. Using a mini muffin tray, place chocolate on the bottom of each muffin spot( i used a paintbrush to spread the chocolate)and then put in freezer for 10 minutes
3. Take out of freezer and place a small spoon of almond butter on top of chocolate
4. Next using your paint brush or a spoon cover the almond butter with more chocolate.
5. Then freeze again for 10 minutes.

    I made the pecan praline bars today. I was making them for our church thanksgiving dinner tomorrow evening but couldn’t use this batch bc the coconut oil rose to the top and turned it all white. They were super delicious though! Just curious how you kept this from happening? I definitely want to make them again.

    No, I’m talking about when it went in the fridge and hardened.
