Paleo Coconut Squares


It's the weekend and that means its time to make a paleo treat. I wanted to try something new and I found this recipe onpaleo diet lifestyle so I decided to try it.
This morning at crossfit Alexandria we had a pretty hard wod and followed that up with taking the kids to two birthday parties. I feel like we deserve a little something special to eat today. Our WOD today at crossfit was "Karen"(150 wall balls), run a mile as fast as you can immediately afterwards, "Elizabeth"(21-15-9 powder cleans and ring dips), then finish with 50 chest to bar pull ups. So, if that doesn't sound hard to you.......it should. It was fun and extremely tiring and after watching everyone eat birthday cake at the parties today, I am really looking forward to eating these coconut squares tonight after dinner.
For dinner tonight we are having paleo pizza . I haven't made this in forever, it's going to be a real treat!


To make the coconut squares you will need:
3 eggs,
1 cup coconut milk,
1/3 cup coconut oil,
1/3 cup raw honey,
1 tbsp vanilla,
1/2 cup almond flour,
1 tbsp coconut flour,
1 1/2 cup unsweetened coconut flakes,
1/4 tsp salt.

1. Preheat oven to 350.
2. Using a mixer combine eggs, coconut milk, coconut oil, honey, and vanilla in a bowl.
3. Once mixed slowly add the almond flour, then coconut flour, and finally the shredded coconut.
4. Pour mixture into an 8x8 baking dish and bake for 30 minutes.
5. Cut squares and keep in refrigerator until serving.

    Sorry if this is a dumb question but is raw honey different then your typical store bought honey in the bear bottle??

    I see online raw honey that’s unheated and unprocessed, is that what I need?
