BBQ Pork nachos

 
BBQ Pork Nachos

I used my leftover pork from the other night to make these delicious nachos.

To make:
Grilled Pork Tenderloin
Sugar free, gluten free BBQ sauce
1 avocado sliced
1 tomato sliced
1 onion, sliced
Olive oil
Plantain chips

1. First chop your tenderloin into small pieces. In a skillet combine pork with just enough BBQ sauce to coat it and cook until coated and starting to brown. Set aside
2. In a skillet with olive oil place sliced onion and cook down until brown and caramelized
3. On a plate place plantain chips, pork, sliced avocado, sliced tomato, and caramelized onions.
4. Enjoy.

    What a good idea to use plantain chips… did you make your own chips or buy them from the store?

      Hey-
      It just depends. If I can find really good ripe plantains at the store I will make them, but if not, I just buy them
