Bacon Wrapped Pork Tenderloin

This is a recipe that I have been wanting to try. I found it on pinetrest and changed a few ingredients to make it paleo. We had it with some roasted beets and collard greens that we got from our CSA box this week from Inglewood Farms.

To make the pork:

2 pork tenderloins
10-12 pieces of bacon
1/2 tsp salt
1/2 tsp garlic powder
1 tablespoon minced garlic
3/4 cup coconut aminos
1 tablespoon coconut vinegar or white vinegar
1 tablespoon honey

1. Preheat oven 300
2. Place tenderloins on a baking sheet and wrap in bacon
3. Poke holes in the meat with a fork
4. Mix all ingredients in a small bowl and pour over meat
5. Bake for 2-3 hours. Leave uncovered for first 1.5 hours and then cover with foil to if Ian cooking.

    My husband is allergic to honey and a type 1 diabetic. Do you think coconut nectar will give the same effect?
